What could be finer than eating good food while watching red kites circle overhead, asks chef-proprietor Simon Crawshaw of The Three Horseshoes at Radnage

If you were stranded on a desert island which three foods would you want to take with you?
Bacon, foie-gras and wild strawberries. Hopefully there will be plenty of fresh fish as well.

How would you describe your menu? Predominately English with classic French influences from my years of training in French kitchens.

Which chef do you most admire? Eric Chavot, head chef at The Capital Hotel in London. He was my Head Chef at Chez Nico.

How would you describe your approach to food?
I like to cook classic and modern dishes using good quality raw ingredients and I avoid over complicating dishes with too many flavours.

What local product do you value most? Red Lion Farm in Britwell Salome, Oxfordshire, supplies me with great free range organic pork. Chris has a wonderful farm shop that sells other meat too.

How often do you change the menu? At least twice a week we will change two or three items depending on what products my local suppliers are offering and also what produce is coming
into season.
What is your favourite kitchen utensil? It is not really a utensil but it would be my ice-cream machine. I love to experiment and concoct different ice-creams. At any one time I normally have between six to eight flavours in my freezer.

What's your most memorable meal? Whilst working at Chez Nico, Ninety Park Lane, as a reward for working flat out for a month, Nico offered me dinner for two in his restaurant. My wife and I were treated to a seven course taster menu which was amazing.

Who or what switched you onto cooking?
My Mum.Whilst running her own business, she still found time every evening to cook a meal from scratch for our family. Both my parents have a put a lot of time and effort into my career, especially with the Three Horseshoes.

What do you like most about your restaurant?
It has to be the location and the views of the Chiltern hills with red kites circling above.
